Prawns in Green Sauce
Ingredients
Prawns (shelled, deveined and washed) – 250
gms
Curry leaves – 2 sprigs
Ginger – ½ inch piece
Garlic – 4 cloves
Green chillies – 4
Coriander leaves – ½ bunch
Mint leaves – ½ bunch
Turmeric powder – ¼ tsp
Salt – to taste
Coconut oil – 2 tbsp
Dry red chilli – 1 to temper
Coriander leaves for garnish.
Method:
Grind together coriander leaves, mint, green
chillies, ginger and garlic into a paste.
Marinate prawns with a little salt, turmeric and
the green paste for at least a couple of hours.
Heat the coconut oil in a pan. Add the curry
leaves and the red chilli. Fry for a while.
Add the marinated prawns. Saute for a while. Cover with a lid and cook on a low flame. The
prawns will release enough moisture. Cook till done and all the water is
evaporated.
If you want gravy, add a little water and cook till
done.
Garnish with chopped coriander leaves.
