Quick Egg Fried Rice

Ingredients : Eggs - 2 Onion – 1 large chopped Coriander leaves – 1/2 bunch chopped Cooked Rice – 1-1/2 cups Green chilli – 1 (optional) Pepper powder - 1/2 tsp (adjust for taste) Turmeric powder – ¼ tsp Salt to taste Ghee/refined oil – 3 tbsp Method : Heat ghee/oil in a thick bottomed pan. Add chopped onion and fry till golden brown. Add the chopped green chilli. Add a few coriander leaves. Add pepper powder, turmeric powder, salt. Beat the two eggs lightly together and add into the pan. Keep stirring until they scramble. Cook until eggs are done stirring to avoid it sticking to the pan. Add the rice and mix thoroughly. Remove from flame.  Check for salt. Add salt/pepper per taste. Mix well.  Garnish with chopped coriander and serve hot.

Mutton Biryani

Ingredients : Mutton – 250 gms Rice – 2 cups Onions – 2 large Tomato – 1 Coconut – ½ cup Coriander leaves – 1 bunch chopped Mint leaves - 1 bunch chopped Star anise – 1-2 Cardamom – 3 Cloves – 4-6 Cinnamon – 1 inch piece Green chillies – 3-4 Garam masala powder 1 tsp Turmeric powder – ¼ tsp Salt to taste Ghee – 3 tbsp Oil – 3 tbsp Ginger-garlic paste – 1 tsp Kachampuli-  ½ tsp (substitute lemon/tamarind for the sourness) Method : Wash the meat and marinate with a little salt, chilli and turmeric powder for ½ hour. Grind coconut fine and keep aside. Heat the oil and ghee together in a cooker.  Add star anise, cardamom, cloves, and cinnamon and fry for a few seconds.  Add green chillies, ginger-garlic paste, saute for a few seconds and add onions.
