Chicken Biryani

Ingredients : Chicken – 250 gms Rice – 2 cups Onions – 2 large Tomato – 1 Coconut – ½ cup Coriander leaves – 1 bunch chopped Mint leaves - 1 bunch chopped Star anise – 1-2 Cardamom – 3 Cloves – 4-6 Cinnamon – 1 inch piece Green chillies – 3-4 Garam masala powder 1 tsp Turmeric powder – ¼ tsp Salt to taste Ghee – 3 tbsp Oil – 3 tbsp Ginger-garlic paste – 1 tsp Kachampuli-  ½ tsp (substitute tamarind/lemon juice for the sourness) Method : Wash the meat and marinate with a little salt, chilli and turmeric powder for ½ hour. Grind coconut into a fine paste fine and keep aside. Heat the oil and ghee together in a large heavy bottom pan.  Add star anise, cardamom, cloves, and cinnamon and fry for a few seconds. Quick Stir-Fried Prawns

Ingredients Prawns  (shelled, deveined and washed) – 250 gms Garlic – 4 cloves crushed Turmeric powder – ¼ tsp Soy sauce – 1-1/2 tbsp Green chilli sauce – 1 tbsp Chilli flakes – 1 tsp Mixed herbs – a pinch Salt – to taste Oil – 2 tbsp Sping onion – ½ cup chopped Method: Marinate prawns with a salt and turmeric for at least a couple of hours. Heat the oil in a pan. Add garlic and fry for a while.  Add the marinated prawns. Add soy sauce and chilli sauce and mix well.  Add chilli flakes.  Check for seasoning.  Cover with a lid and cook on a low flame. The prawns will release enough moisture, so need not add water. Cook till done and all the water is evaporated.  Add chopped spring onion.  Mix well and switch off the flame.  Serve hot.

Egg Curry With Coconut

Ingredients: Boiled Eggs - 6 Boiled potatoes - 2 Coconut grated/finely chopped – ½ cup Onion – 1 large (chopped into thin slices) Tomatoes – 1 chopped Garlic – 4-5 cloves chopped. Ginger- ½ inch piece chopped Red chilli powder- ½ tsp Turmeric powder – ¼ tsp Coriander powder – 1 tsp Roast and crush 2 cloves, ½ inch cinnamon piece, and 1 cardamom Mustard seeds – ½ tsp Dry red chilli - 1 Green chilli – 1, slit Oil – 2 tbsp Curry leaves – 1 sprig. Salt – to taste Kachampuli – 3 drops (or pulp of a lemon-sized tamarind soaked in 3-4 tbsp water) Coriander leaves – Finely chopped for garnish. Method: Boil and peel eggs and potatoes. Cut the eggs into halves with a sharp knife and keep aside. Mash the potatoes coarsely and keep aside. Grind together coconut, tomatoes, coriander powder, roasted cloves, cinnamon and cardamom, ginger and garlic into paste. Prawns in Green Sauce

Ingredients Prawns  (shelled, deveined and washed) – 250 gms Curry leaves – 2 sprigs Ginger – ½ inch piece Garlic – 4 cloves Green chillies – 4 Coriander leaves – ½ bunch Mint leaves – ½ bunch Turmeric powder – ¼ tsp Salt – to taste Coconut oil – 2 tbsp Dry red chilli – 1 to temper Coriander leaves for garnish. Method: Grind together coriander leaves, mint, green chillies, ginger and garlic into a paste. Marinate prawns with a little salt, turmeric and the green paste for at least a couple of hours. Heat the coconut oil in a pan.  Add the curry leaves and the red chilli. Fry for a while. Add the marinated prawns.  Saute for a while.  Cover with a lid and cook on a low flame. The prawns will release enough moisture.  Cook till done and all the water is evaporated. If you want gravy, add a little water and cook till done. Garnish with chopped coriander leaves.

A soothing tasty chicken gravy dish that is a wonderful accompaniment to rice, biryani, chapati, akki roti, aappam, etc. Ingredients: Chicken pieces (with and without bone)- 250 gm. Pork Curry

Ingredients: Pork - 1 Kg  Onions -  2 large  Ginger-  2-inch piece  Garlic -  10 cloves Green chillies -   4-5  Turmeric powder -  1 tsp  Red chilli powder -  ½ tsp  Coriander leaves  -  Half bunch  Salt to taste Kachampuli *** 1 tsp  Dry Roast (each separately): Coriander seeds -  5 tsp  Jeera -  1 tsp  Cloves -  ¼ tsp  Cinnamon  ¼ inch Pepper corn -  1 tsp  Mustard seeds -  1 tsp  Cardomom -  2-3  Few curry leaves Method: Marinate pork with chilli powder, salt and turmeric for half hour. Ingredients Prawns  (shelled, deveined and cleaned) – 250 Onion – 1 large chopped Curry leaves – 2 sprigs Ginger –garlic paste- 1 tsp Pepper powder – 2 tsp Green chilli – 1 Turmeric powder – ¼ tsp Saunf powder- ¼ tsp Coriander powder- ½ tsp Salt – to taste Coconut oil – 2 tbsp Dry red chilli – 1 to temper Coriander leaves for garnish. Method: Marinate prawns with a little salt, turmeric and pepper powder. Heat coconut oil in a pan.  Add the red chilli and curry leaves.  Add the onion and green chilli and saute until onion turn golden brown. Add ginger-garlic paste and fry for a while. Add the rest of the turmeric powder and pepper powder.  Add coriander powder and saunf.  Toss them for a few seconds. Add the prawns and mix well.
