Milky Mushroom Fry
Ingredients:
Milky
mushrooms - 200 gm chopped
Onion – 1
large (chopped)
Tomatoes
– 2 (Finely chopped)
Salt – to
taste
Turmeric
powder – ¼ tsp
Chilli
powder – ½ tsp
Coriander powder - ½ tsp
Coriander powder - ½ tsp
Kachampuli –
3 drops (or pulp of tamarind soaked in 3-4 tbsp water)
Oil – 2-3
tsp.
Mustard –
¼ tsp.
Curry
leaves – 1 sprig.
Garlic –
4-5 cloves very finely chopped/crushed
Coriander
leaves – Finely chopped for garnish.
Method:
Heat oil,
add the mustard and allow them to crackle.
Add the
garlic and curry leaves and saute for a few seconds.
Add the
onions and saute till they are golden brown.
Add
tomatoes and let it cook till very tender.
Add salt,
turmeric powder, chilli powder and coriander powder and mix thoroughly.
Now add
the chopped milky mushroom. Do not add any water as the mushrooms release
moisture as it is cooked. Mix the mushrooms well and cover with a lit. Keep
stirring at regular intervals. Check for salt/chilli.
Add 2-3
drops of kachampuli when the mushrooms are almost done.
Once
mushrooms are cooked, switch off the flame and garnish with fresh chopped
coriander.
